I have to admit that broccoli
does not taste good on its own.
Try eating baked broccoli
without any sauce, yuck, the taste is plain.
However I really enjoy eating
broccoli with melted cheddar cheese, also broccoli in fettucinni.
Those two are high fat foods
unfortunately, so how could I continue eating delicious broccoli dishes without
sacrificing my waist line ?
Broccoli is a good ingredient
that is low in calorie and rich in vitamins. However consuming it with cheddar
cheese or other fattening menu will force me to buy a new pants soon.
Naturally as a dieter, I often
turn into vegetarian dishes to provide me with healthy, low fat recipes.
Therefore from my experiment I found that broccoli makes a good addition into a
tomato soup.
Tomato itself is a good
ingredient rich in lycopene, vitamin C and vitamin A.
Lycopene prevents heart disease
and helps us protect our cells from cancer. Two tomatoes consumed everyday will
fulfill 2/3 of my vitamin C needs.
And best of all, it does not
add pressure to my waist, and I still can enjoy good broccoli with good tomato
soup. Here's the recipe for tomato and broccoli diet soup.
Ingredients
Tomatoes 400 grams
Sea Salt and pepper for taste
Water 400ml
Margarine
Tomato paste 2 tablespoons
Onion 1 medium size, chopped
Olive oil
White wine 100ml
Broccoli 200 grams
Instructions:
1. Clean and chop the broccoli
2. Sprinkle the tomatoes with olive oil, salt
and pepper lightly - put it in roasting pan.
3. Slightly cut open the tomatoes to form an
X sign at the top of the tomatoes
4. Preheat the oven lightly and roast the
tomatoes for 30 minutes in 250 celcius heat
5. After 30 minutes, remove the tomatoes and
let it cool until you can handle it with your hand
6. Peel the tomatoes skin carefully then put
it into a blender or food processor, add the tomato paste and 50ml water.
7. Heat the margarine in a saucepan, and add
the chopped onion and broccoli Cook them in medium heat until the onion begins
to turn brown
8. Heat the water and put in the onion and
broccoli and the tomatoes mixture. Cook it for about 5 minutes and add the
white wine.
Let it boils for about 15
minutes, don't forget to stir it continously during the boiling process.
Serving: 2 people
